Grandmother Costley's Refrigerator Cookies

By request from Candace, here is my Grandmother Costley's recipe. I remember a cookie jar in her kitchen that seemed to be bottomless -- filled with these cookies!

3/4 c. melted shortening
2 eggs, well beaten
2 c. brown sugar
2 1/2 c. flour
2 tsp. baking powder
1 tsp. salt
1 c. chopped nuts (pecans)
1 tsp. vanilla

Melt shortening and cool. Combine eggs and brown sugar; beat until sugar dissolves. Add melted shortening and blend thoroughly. Sift flour with baking powder and salt. Add to first mixture, mixing well. Add nuts and vanilla. Shape into 3 rolls (log shaped), 2 inches in diameter. Wrap in waxed paper. Store in refrigerator overnight or until firm enough to slice. Cut into thin slices with sharp knife and place on greased cookie sheet. Bake at 375 degrees for 12 to 15 minutes. Makes 5 dozen.

thanks mom, gonna have to try this soon.

One question though, melted shortening? Just melt it like you would butter?
